And our winning recipe is.....
MANGO-LIME CHICKEN KABOBS WITH CONFETTI SALSA

Ingredients:
1 ripe mango, 1 ripe peach or nectarine, ½ red bell pepper, ½ orange bell pepper, ½ green bell pepper, ½ cucumber, 1 small glove of garlic, 4 limes, 2 boneless skinless chicken breasts, 4 tablespoons of Olive Oil, Salt and Pepper to taste
Procedure:
Soak the Kabobs sticks in water to prevent them from burning during grilling. Peel the mango using a peeler. Using a knife, cut along the seed and remove the mango pulp. Cube half of the mango into small sized cubes and set aside.
Roughly chop a small sized garlic glove, and put into a food processor. Add the other half of the mango to the food processor along with the juice of 2 limes, the olive oil, ½ teaspoon of salt and two grinds of black pepper. Once blended, set aside in a bowl.
Cut the chicken breast into long strips, and cut the long strips into 1 or 1½ inch cubes. You want to make sure that the chicken cubes are roughly the same size so that they cook evenly. Place the chicken cubes into the mango-lime marinate, and cover with plastic wrap. Marinate for at least 1 hour in the refrigerator. Meanwhile, chop the red, green, and orange peppers into small cubes. Peel the cucumber and take out the seeds. Chop the cucumber into small cubes. To chop the peach or nectarine, use your knife and cut around as you would cut an avocado. Chop the peach or nectarine into small cubes as well. It is important that all the fruits and vegetables in the salsa are uniform.
In a bowl mix the chopped mango, peach or nectarine, the cucumber and the peppers. Add the juice of two limes, and 2 tablespoons of cilantro. Add salt and pepper to taste. Cover with plastic wrap and store in the refrigerator until it is ready to serve.Skewer three or four chicken cubes into a bamboo skewer. Season the chicken kabobs with salt and pepper to taste.
Oil the grill and grill the chicken kabobs for 2-3 minutes on each side until they are cooked. If you don’t have access to a grill you can also cook the chicken kabobs in a skillet with a bit of olive oil. Place the Mango-Lime Chicken Kabobs in a platter and spoon the Confetti Salsa into a bowl. Spoon a bit of the confetti salsa over the chicken kabobs for garnish and enjoy!
